  • Below are the recipes for the delicious dishes that Liz made.

RECIPE: Salmon stuffed with green beans with a maple sauce cream

Ingredients (Serves 6)
1 large side of salmon, skinned
6 slices of streaky black bacon
About 35 green beans (3 small handfuls), topped
Salt and pepper
Olive oil

For the maple sauce:
350ml/12 floz whipping or double cream
25g/1 oz cold butter
1 tbsp. maple syrup

Method

  • Preheat the oven 200C/400F/Gas 6.
  • Bring a pot of salted water to the boil. Blanch the beans for 2 minutes and immediately plunge into very cold water to refresh them. Remove from the water and dry well. Drizzle with oil and season to taste.
  • Cut the salmon fillet the same length as the beans. Using a long filleting knife, cut a slit through the centre of the salmon (lengthways) without opening up the sides. Push the blanched beans through the salmon. Cut the salmon into darns and lay a strip of streaky black bacon over each one, tucking the ends underneath.
  • Drizzle with olive oil and roast for 7-8 minutes.
  • To make the sauce, pour the cream into a large pan and bring to the boil, reduce to a simmer and reduce by half. Stir in the butter and maple syrup to taste.
  • Serve the salmon hot with the sauce and new potatoes and fresh herbs.
