Chiang Mai Curry Chicken Noodle

Red Curry Paste

Ingredients

  • 2 Tsp. Coriander Seeds
  • Pinch Cloves
  • 30g. Cardamom Pod, cracked
  • 80g. Garlic, sliced
  • 80g. Shallots, sliced
  • 60g. Chilli
  • 40g. Lemongrass
  • 80g. Ginger
  • 70g. Fresh Turmeric
  • 1 Tsp. Curry Powder

Method

  • Add coriander seeds and cloves to low burning wok for 30 seconds or until aromatic. Add to mortar and pestle and grind as fine as possible.
  • Add garlic, shallots, chilli, lemongrass, ginger and tumeric to wok on medium heat. Cook until shallots are soft. Transfer into separate mortar and pestle.
  • Add salt to coriander mix, grind up and then add into garlic mix. Add curry powder.

Khao Soi
(Chiang Mai Curry with Chicken and Noodles)

Ingredients

  • 1 ½ Cup Coconut Cream
  • Curry Paste as above
  • 600g. Chicken, chopped
  • 1 ½ Cup Coconut Milk
  • ¼ Cup Water
  • 2 Tsp. Palm Sugar
  • Pinch Salt
  • 45ml. Fish Sauce
  • 1 Tbsp. Vegetable Oil

Method

  • Add 1 cup coconut cream and curry paste to pot on high heat. Mix and add rest of coconut cream. Continue stirring.
  • Add chicken to pot and seal. Add coconut milk and bring to boil. Add water, if necessary.
  • Add remaining ingredients.
  • Heat oil in deep pan and add crispy noodle. Cook until golden brown, take noodles out before they turn dark brown.
  • Serve curry with pickled green mustard, fresh coriander and crispy noodles on top.

*Optional* Curry is best served on top of steamed noodles.
