Korean Beef BBQ/Galbi

Suwon region is famous for their galbi, which is marinated beef barbecue that’s cooked on a charcoal fire that site right in the middle of your dining table.

Scott visits the Kubujung Restaurant right in the heart of Suwon to show us how to cook it.

We have a lovely bit of short rib, which has been flayed, trimmed down and marinade with 7 different ingredients: sesame oil, muscovado sugar, garlic, ginger, pepper, salt and some spring onion. Pour straight onto the beef, give it a rub with your hands, place in the fridge and marinade for about a day

. Scott puts this on first, a couple of minutes on each side and a snip with the Korean scissors and it’s ready to eat.

So how do you eat it? Well, it couldn’t be easier. The key is the little side dishes. You start with a lettuce leaf and delicious red bean paste. The beef goes straight in the middle along with anything you like.
